To parry in Elden Ring, you need to equip a shield or weapon with the parry skill on it. Some shields already have the parry skill. If not, you can by the Parry Ash of War and equip it yourself or use a blacksmith.

Practicing Parry

Once you have the right equipment, you can learn how to parry by practicing as follows. With a shield in your left hand on Xbox / PS press LT / L2 as an enemy swings a weapon at you. A successful parry will stun the opponent. Then you can follow up with RB / R1 to perform a high damage attack.
